Simple Soba to Bid the Old Year Farewell
In Japan, New Year's Eve is celebrated simply--traditionally with a bowl of warm soba noodles. Here, Warren embraces this custom with soba noodles in dipping sauce.
To make your own dipping sauce, combine about 2 cups of dashi (Japanese soup stock, such as in steps 1 - 4 in Risa's Noodle Soup), 1/3 cup of mirin or dry sherry, and 1/3 cup soy sauce. Use the sauce as a dip for your soba noodles, garnished with whatever toppings inspire you (in addition to green onions, consider pieces of nori, shiitake mushrooms, fish cakes, spinach, or tofu), and enjoy!
